BBQ & BEER CLAsS RecAP

On April 11, 2019, Chris and his team arrived in the early afternoon and began unloading all of his impressive smoking equipment, quality ingredients, and savory meats and cheese. As Chris set up the preparation for the menu, I was amazed at the level of ease he handled the large number and variety of foods. 

Chris Marks of Three Little Pigs BBQ, based in Kansas City MO, is an 8-time winner of the American Royal Grand Championship. He has won over 50 other national bbq championships and hundreds of awards. 

He chatted with me while he seasoned, trimmed and prepared marinades for the different courses. While he worked, he expertly taught me the chemistry behind his expertly crafted rubs. Did you know that sugar carmelizes once the heat is applied? This is key to getting a gorgeous crust. Talk about cool! 



 



Once the prep of the chicken, steak, pork, and vegetables and fruits was complete, I watched Chris start his Good One Smoker. He only uses 100% lump charcoal and wood chips. He explained that the charcoal has to be 100% pure for the best flavor and cook results. 

After a few hours of smoking, the food was finally ready for the BBQ class. Excited attendees arrived early and quickly. All the chairs were filled and the room eagerly awaited for the opening remarks.  Pollyanna Brewery arrived and set up their beer pairings for the menu. Paul from Pollyanna explained how the notes of the brews would compliment the meats in each course. It was very educational, light, and tons of fun! 



 
 
 


Attendees at the class varied between friend groups, small families, and couples who made the class a "date night" activity. Guests asked Chris questions about his "secrets" to the perfect smoke and stories about his time spent on the BBQ Circuit.

The people in the room had a clear passion for BBQ that was undeniable. Chris is an excellent instructor that meets people at their own level and illustrates techniques in a manner that is simple and approachable. 

His favorite things to say were "BBQ is About You" and "It's Really that Simple"  He made it clear that BBQ is meant to be personal, not a copy of someone else.
