The Ultimate Barbecued Chicken

2 quarts of water

2 tablespoons kosher salt

1/4 cup of brown sugar

2 garlic cloves, smashed

4 sprigs fresh thyme

6 chicken legs and thighs

The Ultimate Barbecue Sauce:

1 slice of bacon

1 bunch fresh thyme

Exta-virgin olive oil

1/2 onion, chopped

2 garlic cloves, chopped

2 cups ketchup

1/4 cup brown sugar

1/4 cup molasses

2 tablespoons red or white wine vinegar

1 tablespoon dry mustard

1 teaspoon ground cumin

1 teaspoon paprika

Freshly ground black pepper



For the brine portion of the recipe, combine the salt, garlic, water, sugar, and thyme into a 2-gallon size resealable plastic bag. Once you have added the ingredients add the chicken into the bag, seal it, and refrigerate for 2 hours.


While the chicken is marinating in the fridge, it's time to make the Ultimate Barbecue Sauce. Take the bacon and wrap it around the bunch of thyme and tie (you can use kitchen twine) so you have a nice bundle. While you have this, heat 2 tablespoons of oil in a saucepan over medium heat. Add thyme and continue to cook slowly about 3 to 4 minutes to render the bacon fat and give the barbecue sauce more of a smokey flavor. Add the garlic and onion and let cook for 5 minutes. Add the remaining ingredients and cook slowly for 20 minutes to blend in all the flavors.


Preheat oven to 375 Degrees Fahrenheit 


Preheat your outdoor gas or charcoal grill to a medium heat. Don't forget to wipe down and clean your grill before starting to cook. Take the chicken out from the bag, pat it down until dry with paper towels. Place the pieces of chicken onto the grill, turn once half way, and cook for about 10 minutes. After 10 minutes, transfer the pieces of chicken onto a cookie sheet and place in the oven. Cook the chicken for 15 minutes, remove after time is up and coat it with the barbecue sauce you have made then return back in oven for 25-30 more minutes.
