Barbecued Quesadillas With Pico De Gallo and Black Beans

It is easy to make a quesadilla, all you need is cheese and a tortilla, but this recipe will help you get past those boring quesadillas! With all the different ingredients to add in, and the pico de gallo to make as well, this will be an incredibly spiced up meal.

Ingredients

Quesadillas:

  • 2 lbs of ground beef
  • 1 yellow onion, trimmed, peeled, and finely diced
  • 1 red pepper, trimmed and finely diced
  • 8 spring onions, trimmed and finely sliced
  • 1 pilsner beer
  • 2 lbs of cheddar or Jack cheese, shredded
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp of unsalted butter
  • Sea salt to taste
  • Fresh ground black pepper to taste
  • 16 flour tortillas 12"
  • Sour Cream, garnish
  • Pico de Gallo, garnish
  • Black Beans, garnish
  • Tortilla Chips, garnish

Spice Mixture:

  • 2 tbsp of ground Ancho Chile
  • 2 tbsp of ground cumin
  • 1 tbsp of ground coriander
  • 1 tbsp of ground paprika
  • 1 tsp of ground garlic

Pico De Gallo

  • 12 roma tomatoes, finely diced
  • 1 red onion, finely diced
  • 1 bunch fresh cilantro, finely chopped
  • 3 lime, zested and juiced
  • 1 jalapeno pepper, finely chopped
  • chipotle pepper finely chopped to taste
  • flaked sea salt to taste
  • fresh ground black pepper

Black Beans

  • 5 cups black beans
  • 1 yellow onion finely diced
  • 1 jalapeno pepper finely diced
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp of unsalted butter
  • Sea salt to taste
  • Fresh ground black pepper to taste

Quesadillas: 

  1. Heat a heavy-bottom or cast-iron pan over medium-high heat, add butter and oil.
  2. Add onion and red pepper, season with salt and pepper, sauté until golden brown.
  3. Add ground beef, season with salt, pepper, and spice mixture, sauté until golden brown.
  4. Deglaze pan with beer, reduce liquid until almost dry.
  5. Heat a large heavy-bottom or cast-iron skillet over medium-high heat, season with corn oil.
  6. Place flour tortilla on the pan, build quesadilla with beef, cheese, black beans, and Pico de Gallo.
  7. Top with another tortilla, drizzle oil on top, turn quesadilla when tortilla has browned.
  8. With both tortillas toasted and browned, remove from the heat, rest for 1 minute before slicing.

Spice Mixture:

  1. Combine ingredients, mix thoroughly and store in an air-tight container.

Pico De Gallo:

  1. Combine tomatoes, onion, cilantro, lime zest and juice, jalapeno in a large bowl.
  2. Season with salt and pepper, adding chipotle to increase the heat.

Black Beans:

  1. Heat a heavy bottom or cast iron pan over medium-high heat, add butter and oil.
  2. Add onion and jalapeno pepper, season with salt and pepper, saute until golden brown.
  3. Add black beans, season with salt and pepper, adding chipotle to increase the heat.
