Linesman Pulled Pork Hoagies

Now who doesn't like a good pulled pork sandwich? This recipe takes it another step further with great tastes and ingredients. You can make this meal extremely easily, making it perfect for someone with any cooking skill level. 

Ingredients

For The Marinade:

  • 4 cups of apple cider
  • 3 pieces of fresh thyme
  • 3 pieces of fresh rosemary
  • 3 pieces of shallots, trimmed, peeled and finely sliced
  • 12 garlic cloves, trimmed, peeled and sliced in half
  • 1 jalapeño pepper, sliced
  • 1 tbsp of fennel seeds
  • 1 tbsp of coriander seeds
  • 1 tbsp of allspice berries
  • 3 pieces of whole star anise 

For The Pork Shoulder:

  • 5.5 lbs pork shoulder, trimmed
  • 4 hoagie rolls, sliced in half, lightly buttered and grilled
  • 1 tbsp of unsalted butter
  • 1 tbsp of canola oil
  • Flaked sea salt to taste
  • Fresh ground black pepper to taste
  • Whole grain mustard as a garnish

For The Coleslaw:

  • 1 savoy cabbage, trimmed, cored, and finely sliced
  • 1 fennel bulb, trimmed, cored, and finely sliced
  • 1 carrot, peeled, and trimmed
  • 1 lemon, zested and juiced
  • 1 tbsp of fresh ginger, peeled and finely grated.
  • 3 pieces of fresh mint, leaves stripped and sliced
  • 1/2 cup of mayonaise
  • 1/2 cup of cider vinegar
  • 2 tbsp of wildflower honey
  • 2 tbsp of whole grain mustard
  • Celery seed to taste
  • Flaked sea salt to taste
  • Fresh ground black pepper to taste

Directions

Pork Shoulder:

  1. Combine ingredients in a large mixing bowl or sealable plastic bag, add pork shoulder, refrigerate overnight.
  2. Position rack in the center of the oven, preheat to 325 F (165 C).
  3. Heat a cast iron or heavy bottom braising pan over medium-high heat, add butter and canola.
  4. Season pork on all sides with salt and pepper, gently add pork to the pan, saute on all sides until golden brown.
  5. Transfer pork to a platter, deglaze pan with hard cider, add marinade, and bring to a simmer.
  6. Return the pork to the pan with resting liquid.
  7. Cover and transfer the braising pan to the oven, braise for 2-3 hours or until tender.
  8. Using Tongs, transfer the pork to a platter, spoon off any excess fat.
  9. On the stovetop over medium-high heat, reduce the liquid until desired consistency.
  10. Using two forks, shred the pork, layer on bun with coleslaw and whole grain mustard.

Coleslaw:

  1. Combine ingredients in a large mixing bowl, season with salt and pepper, refrigerate overnight.
